The duration of the process varies from 5 to 30+ hours based on the food's moisture content. First, the food is frozen at extremely low temperatures, around -45°C. Then, a vacuum is created while gradually warming the food, causing sublimation, where water transitions directly from a solid to a gas. This results in a uniquely crunchy and flavourful freeze-dried treat, preserving the original taste and nutrition.

Do You Add Anything to the Food to Make It Freeze Dried?

No, we do not add any chemicals or ingredients during the freeze-drying process. The food is exposed to alternating warm and cold temperatures in a specially designed machine, which removes its moisture content and turns it into freeze-dried food.

How Do You Work Out the Nutritional Content of Freeze-Dried Candy?

To determine the nutritional value of freeze-dried candy, we cannot rely on the standard weight-to-kilojoules metric due to the removal of all moisture weight during the freeze-drying process. Instead, the kilojoule content should be assessed based on the number of individual pieces consumed. For example, consuming 20 skittles would approximately provide 100 calories (420 kJ). It's essential to consider and track kilojoules on a per piece basis, as freeze-drying doesn't alter the calorie content of the candy.
